Creamy Macaroni Salad
A creamy macaroni salad is a true cameleon... I've had some that were slightly sweet, some savory... It's exactly what you make of it. Below is a great savory recipe, but feel free to alter it and experiment a little!

Ingredients:
1/2 pound elbow macaroni, cooked, drained, and chilled 1 cup diced celery 1/2 cup minced scallions or 1 small yellow onion, peeled and minced 1/3 cup minced sweet green and/or red pepper
1/2 cup mayonnaise 1/2 cup blue cheese dressing 2 tablespoons lemon juice 2 teaspoons prepared mild yellow mustard 1 cup diced sharp cheddar, or Swiss cheese Fresh tomato wedges Boiled egg quarters Salt and pepper to taste
Directions - Macaroni Salad Recipe:
Make sure that you begin with cooked and chilled macaroni for this salad.
In a large mixing bowl combine all ingredients. Add salt and pepper to taste. Toss gently until salad is well mixed. Cover and chill for several hours.
Pour salad into a decorative serving bowl, or individual salad bowls. Serve garnished with tomato wedges and quartered hard-boiled egg.
Recipe yields 6 - 8 servings of macaroni salad.
