Dark Cherry Blintz Recipe



This cherry blintz recipe is one of my family's favorites... creamy cheese inside, dark sweet cherries outside. It is simply fabulous!

Ingredients:

1 Recipe Dessert Crepes - cooked on one side
1 cup small curd cottage cheese, cream-style
1/3 cup dairy sour cream
3 tablespoons sugar
2 tablespoons butter
Cherry Sauce Recipe:
1 can (17 oz.) pitted dark sweet cherries
2 tablespoons sugar
1 tablespoon cornstarch
1 tablespoon lemon juice


Directions - Cherry Blintz Recipe:

In a small bowl combine, cottage cheese, sour cream and 3 tablespoons sugar. Mix well.

Spoon about 1 tablespoons of the cream cheese into the center of the browned side of each crepe. Fold your blintz in thirds (one edge to the center covering the cheese mixture, then the opposite edge to the center - overlapping in the middle). At this point, the blintz will resemble a rolled shape. Next, fold each open end of the blintz to the middle. Blintz should now resemble a square or pocket shape.

In a large skillet melt butter. Add folded blintzes, seam side down, and brown lightly. Turn and brown other side.

Meanwhile, drain cherries, reserving syrup. In saucepan stir together 2 tablespoons sugar, cornstarch, reserved cherry liquid, and lemon juice. Stirring constantly, cook over medium-high heat until mixture comes to a boil and is smooth and thickened. Add cherries and heat through. Spoon over hot blintzes to serve.

Recipe yields about 12 blintzes.
