Creamy Blueberry Crepe Recipe

If you have never had crepes before, this blueberry crepe recipe is the one to try. It is simple to make and Ohh.. soo.. delicious!

Ingredients:

1 Recipe Dessert Crepes
1 pint fresh blueberries
1/2 cup sugar
1 tablespoon cornstarch
1/4 cup water
1/4 cup light corn syrup
2 teaspoons lemon juice
1/2 cup of an All-fruit berry jelly
3 tablespoons butter, melted
1 package (8 oz.) cream cheese, softened 


Directions - Blueberry Crepe Recipe:

Wash berries and drain. Set aside.

In a small bowl combine cream cheese and berry jelly. Blend until light and fluffy. Next, spread each crepe with about 1 tablespoon cream cheese-jam mixture down center of the crepe. Roll up. Next, brush each rolled crepe with melted butter.

Meanwhile, in a saucepan combine sugar and cornstarch. Stir in water, corn syrup and lemon juice. Add two-thirds of the washed blueberries. Cook and stir over medium heat until mixture comes to a boil and is thickened. Let sauce cool.

To finish crepe, spoon blueberry sauce over crepes to serve. Garnish crepes with remaining whole blueberries.

Recipe yields about 12 crepes.
